I've been building (plastic airplane) models since I was a kid, including a Stinson L-5 light plane that I built for my Dad several years ago. He flew one of those in WWII. I completed the Model Shipways Phantom a couple of years ago, and really enjoyed it. I'm now working on the MS Mayflower, my first plank-on-bulkhead kit. I've been reading some of the build logs for the Mayflower and other ships, and am very impressed. I suggest you start a build log on your Mayflower. It's a great way to make friends and also get help and advice when you need it.
