  1. Good Luck Nick. As you see by the posted photos, I made some changes on my build from the plan instructions. The lip overhang on the roof structure, the port holes and the board&bead in the stern forward of the combing. I also nixed the sails, but used a line to identify their outline.   2. I assume you are referring to the canoe. I did not diverge from the instructions. Just be careful on the laying of planks, keeping in mind that it's easier to sand the outside of the hull then the inside to knock down the plank edges. The interior ribs are installed after the hull is constructed. I would have added 50 percent more so the spacing is closer if I was going to build again. The exterior rub rail is a challenge to make the end bends.  I tapered them a bit after steam bending them close. I think I also changed out the thwarts and seats for mahogany. Stray can pain was easy and perfect. The build goes very fast. good luck.
