Hi Jake

The first mouth-blown cylinder technique of making sheet glass for windows was developed in Germany during the 11th century. In 1226 this technique was brought to England.  Paper would not do well at sea😀   Windows, (called lights on the old ships) in the stern and galleries were likely made of glass on Mayflower as she was built several hundred years later.  It was nothing like the float glass of today, and smaller panes were used as there were limits on sizes with the processes available at that time.
