I agree with Allen, Mystic Seaport Museum would be your best source of information. They do have drawings of The Charles W Morgan for purchase. You can find several build logs on the CWM right here on MSW.

Look on used book websites for the book Whale Ships and Whaling by Church.  Copies are usually inexpensive.  In the early 1900’s when sailing warships were still sailing, the author gave cameras to whale ship captains.  The book is a wonderful collection of whalers working at sea.

Charles M. Scammon's "The Marine Mammals of the North-western Coast of North America" might be of some help.  It shows blubber hooks, whaling and flensing equipment, and even diagrams the harnessing of whales to be flensed.  It is free at https://www.google.com/books/edition/The_Marine_Mammals_of_the_North_western/enc3AQAAMAAJ?hl=en&gbpv=1&dq=Scammon&printsec=frontcover

 

The info is less about how the rigging is attached to the ship than it is to the whale.

 texxn5 has great detail on rigging the blubber hooks etc. on an old build log on this site. I used this info in my MS Morgan build.

Here's a photo of Cutting in Tackle from Tom Lauria's Kate Cory build (  Whaling Brig Kate Cory – Model Ships & Boats by (tjlauria.com). I'm currently working on a KC build and have a copy of the plans from The New Bedford Whaling Museum. Sheet 8 contains a diagram of the Blubber Hook while Sheet 5 references Cutting Tackle Guys. 

 

As for the Morgan, this link will take you to the Model Shipways Instruction Manual, go to page 35 and 38 which has detail on the Cutting Tackle.
