Like the below?  This is supposed to be from the early 17th century, but hope it might help for your 16th century.

That is correct. The 2 wheel carriages were used on Spanish galleons until around 1642 or so. Other countries had already changed to 4 wheel carriages.

The problem is where can I  buy the carriages I need? All I see are 4 wheel types.

Good question on buying them.  I've not seen them though someone may sell them.    Worst case is buy some of the 4 wheeled ones and modify them.

The wheels are rather proportionately small, though.  I ended up modifying 4-wheeled carriages to make 2-wheeled carriages for my Spanish Galleon.
