Cherry is a good wood to work with, easy to get and and great all applications..  If you can find pear that will work as well.

My personal favorites are boxwood for both or boxwood for the deck and pear for the hull.

Basswood is the ole tried and true and have no issues working with it.  However, that being said, when I can swing it I have come to enjoy Holly for decks and Boxwood for hulls.

I've used holly and silver maple for decks.  Currently, my choice would be silver maple due to the price of holly going up and up...

 

For hull planking, cherry or swiss pear.  Depends on a lot of factors.

For me, domesrtic cherry (USA) works great for hull planking.  Apple and domestic pear are excellent too.  For decking, holly. soft maple and birch are all excellent.

I found the sapeli that Occre provides to be very nice to work with for a single planked hull and they supply so much of it too (at least in the Trinidad).

Here in Oz you could also try Privet (light colour like Box) or Cherry Ballart - if you can find some and mill it yourself.  They're both beautiful timbers to work with.
