Easier to bend and flex. with more support from a solid glue surface. When I was working on my Latham hull I was able to plank it with i used 1/64 cherry and it was a dream. Once smoothed and sealed I painted the hull. .5 mm will work as well. As you work on the inner bulwarks and deck shaping, be sure to double-check the depth of the deck against the plans (and take the deck planking into account). I didn't do that on mine, and the quarter deck wasn't deep enough - threw everything off later in the build. But with the detail and attention you're giving this, I doubt you'll have any problem! I'm doing this to keep the bulwarks from breaking while the hull is turned upside down. Time to do research on hull planking before I start! But I would suggest that maybe a piece of cardstock would be better for your application, if I am correctly understanding what you are trying to do. Know though, this is my first ship, and I have never planked a ship before, so my advice should be taken with a grain or two of salt.
